resurrecting the dead here...
we do a lot of electronic enclosures with a "peatrap" type labrynth system. this would give you rain proof and 3-4" submergence before the converters got wet.

 
I put a toggle switch on the fans and hard wired the 12v cables to the box, no Anderson connectors. Easier for me. So if I have to pull the converter box, I pull the wing nuts off the battery and all cables and cords stay with the box. I have pictures somewhere.
 
here they are. I don't have any inside pictures, but there is a 24v converter on edge inside so I could use a smaller box. built a little plywood frame to mount it to that fits snug inside box on all 6 sides.

 
Check the sticky at the top of the lighting section marked "misc wiring and other info". There are diagrams in there for how the converters connect.
Anderson Connectors are just a quick connect for DC power. Like the male and female ends on an extension cord are for AC power.
 
Called Anderson Connectors. Bowfishingextreme has them. #316 on trolling motor parts.
 
I don't see why not, other than the box being big and heavy as chit.
