Whats the best way to cook these things? Anyone have any recipes they can share? Whats the proper way to clean them? We're heading out tomorrow and if the opportunity presents itself arrows will fly so I'd like to have some general knowledge before I start slicing and dicing.

Thanks, I only got one last weekend out of c0ckroach bay just to experiment with a small one about 12" wide. Skinned him then sliced and diced, your way is much easier! We did get 30 mullet and quite a few BIG sheephead.
