Whats the best way to cook these things? Anyone have any recipes they can share? Whats the proper way to clean them? We're heading out tomorrow and if the opportunity presents itself arrows will fly so I'd like to have some general knowledge before I start slicing and dicing.

Cut the wings off and clean until skin feels rubbery and not slimy. Bake in the oven until the meat gets flaky or skin peels off easily. Dip in butter or melt butter salt and pepper. Basically season to taste. it's awesome!

Thanks, I only got one last weekend out of c0ckroach bay just to experiment with a small one about 12" wide. Skinned him then sliced and diced, your way is much easier! We did get 30 mullet and quite a few BIG sheephead.

Yeah, I used to do the triangle fillet method that is shown on some sites. Do that 100 times and you learn fast to just cut the wings off. Plus you don;t lose any meat. Good luck!

After smelling the cownose that we shot last year I would never eat one...
